As dark chocolate specialists, we know that the best couverture comes from exceptional cacao. Our rare ancestral Nacional varieties showcase unique flavors that are enhanced, not masked, by small amounts of raw cane sugar from the same region where our cacao grows.  A naturally high fat content and only pure cacao butter added creates a superbly creamy texture and lingering finish. 

Each of our single origin varieties has a distinct profile, enabling you to select the best couverture for your custom uses.

45% minimum fat content. No oils or other emulsifiers. Pre-tempered.  Can be used to seed untempered or melted chocolate. Once melted however, the couverture will need to be retempered to regain it's snap and shine. 

Processes applied: harvest -> ferment -> sun dry -> hand shell -> grind to paste -> refine to silky texture -> temper and pour
