In the early 20th century, nearly all of the Nacional cacao in Ecuador was destroyed by blight. In response, a farmer named Homer Castro made 51 experimental crosses of different cacao types* to creatre a robust new variety: CCN51. In high demand by mainstream chocolate makers, CCN51 cacao has a pleasing flavor with light citrus notes.
If you prefer a medium roast coffee, white wine, IPA, and your perfect lunch is a cobb salad, you will enjoy the milder flavor of CCN51.
